The Florida Keys Eco Discovery Center run by NOAA is a great spot to visit to learn about the Marine Sanctuary and the conservation programs happening to take care of the waters of the Keys. This free museum/science center is good for both kids and adults and I recommend a visit before heading out for snorkeling around the Keys.
